Cauliflower, chickpea and apple tabbouleh

Ingredients
- 800 g of cauliflower
- 1 Gala apple
- 2 lawyers
- 1 red onion
- 10 g of parsley
- 10 g of mint
- Juice of 1 lime
- 180 g cooked chickpeas
- 1 tbsp. teaspoon smoked paprika
- 2 tbsp. mustard
- 2 tbsp. tablespoon of honey
- 40 ml of water
- Salt and pepper
- 40 ml of olive oil + a tbsp. tbsp.
Preparation
- Pour 1 tbsp. tablespoon of olive oil in a pan, then add the chickpeas. Sprinkle with smoked paprika and mix so that the spice coats the chickpeas well. Cook over high heat for 5 minutes. Reserve.
- Cut the cauliflower into pieces, rinse it, then dry it with a cloth. In a blender, blend the pieces of cauliflower in batches until you obtain small grains. Reserve.
- Wash the apple and cut it into thin strips.
- Cut avocados in pieces. Peel and slice the red onion. Chop the parsley and mint.
- Mix in a salad bowl, cauliflower, chickpeas, apple slices, avocado pieces, red onion, parsley and mint.
- Mix in a bowl, mustard, honey, 40 ml of olive oil, water and lime juice. Salt and pepper, then pour the sauce over the salad. Mix everything.
