Duck breast and apple crostini

Ingredients

  • 1 duck breast
  • 2 apples
  • 30g butter
  • 30 g of sugar
  • 1 tbsp. teaspoon of lemon juice
  • 1 baguette
  • Salt, pepper
  • A few thyme leaves.

Preparation

  1. Preheat the oven at 180°C (th. 6).
  2. Peel and cut the apples into cubes. In a pan, pour the apples, butter, sugar and lemon juice.
  3. Do return for around fifteen minutes over medium heat, stirring regularly. The apples will slowly soften.
  4. Incise in a grid pattern the skin of the duck breast. Season lightly with salt and pepper, then brown the duck breast in the pan, skin side down, over very low heat. Cook for about 6 minutes, regularly removing the cooking fat. When the duck begins to brown, turn it over and sear each side over a higher heat for 1 min.
  5. Place the duck breast in a baking dish and bake for 5 minutes.
  6. Cut slice the bread and lightly toast them. Cut the duck breast into slices then arrange them on the pieces of baguette.
  7. Add a spoonful of apples and a few thyme leaves on each toast. Salt and pepper lightly.
