The recipe for buckwheat blinis to Amandine Geers spinach
Amandine Geers’ note
Why deprive yourself of adding beautiful quantities of green leaves in the blinis when that does not detract from their softness?
Use other types of green leaves (chard, lettuce, etc.) if you want. But the spinach bring their round and enveloping flavor so that this version is my favorite.
Do you know that spinach is part of the foods naturally containing the fifth flavor? Umami, this “tasty taste” as the Japanese call it. I absolutely have to tell you one day.
Free of gluten, these blinis will suit intolerant people. Then be sure to opt for a gluten -free powder.
Enjoy them with a sardine mousse, a houmous or a labné!
