“Should I remove the tops?” How many times have you heard this phrase at the market when buying a bunch of carrots? It has become common practice to eat radish tops, but not carrot tops yet. And yet, they represent half the volume of your purchase. For my part, I eat them in soup, pancakes, terrines, but it is as a condiment that I really like to transform them. Dried, pulverized and mixed with various ingredients, you get a powder to add to your dishes all year round.
