How to cook our leftovers?

The challenge

About 34 grams, the equivalent of two good tablespoons. This is what a person wastes on average in France with each meal. The extra toast from breakfast, the two forkfuls of rice left on the plate, the remains of the spinach pan or the yogurts forgotten at the bottom of the fridge, so many foods thrown away almost without realizing it. This represents, at the end of one year, 29 kg per person. Food waste exists at all levels of the chain (production, processing, distribution, consumption at home and outside the home) and represents, according to Ademe – Ecological Transition Agency -, 10 million tonnes of products lost per year in France. If initiatives are increasing to counter these ecological and ethical aberrations, there are still many reflexes to acquire to stop feeding our trash, particularly in our kitchens. Let’s take a different look at our food leftovers to make the most of these underestimated gems.
